Egg sizes vary significantly between the US, EU, and UK — and using the wrong size can throw off your recipe.

What Most Recipes Assume
- US recipes: Usually call for "large" eggs (53-58g)
- UK recipes: Usually call for "medium" eggs (53-58g) — these are actually the same!
- EU recipes: Varies by country, but "medium" (53-58g) is the most common default
How to Convert
If a recipe calls for 3 US large eggs but you only have EU large (60-65g): - Use 2.5 EU large eggs instead - Or weigh the eggs: recipe needs ~165g total, so weigh out 165g of your larger eggs
Why It Matters
- Too many eggs: Cake will be rubbery, cookies will spread too much
- Too few eggs: Cake will be dry, cookies won't hold together
The Safest Approach
Weigh your eggs. Most baking problems blamed on "egg size" are actually small weight differences that compound across 3-4 eggs.
