Icing Sugar vs Powdered Sugar
These are the same thing — finely ground sugar mixed with a small amount of cornstarch to prevent clumping.
- UK/EU/Australia: Icing sugar
- US: Powdered sugar (also called confectioners' sugar or 10X sugar)
When to Use It
- Glazes and icing — dissolves instantly into liquid
- Buttercream frosting — creates smooth, non-grainy texture
- Dusting — gives a professional finish to cakes, cookies, and pastries
- Royal icing — the base for decorative cookie icing
Cornstarch Content
Most brands add 3% cornstarch. This is fine for most uses, but if you're making a clear glaze or mirror glaze, look for pure powdered sugar (no cornstarch) or make your own by blending granulated sugar in a high-speed blender.

Blend 1 cup granulated sugar with 1 tbsp cornstarch for 1-2 minutes until powdery.
