Fan/Convection Oven Adjustment
If your oven uses a fan/convection setting: - Reduce temperature by 20°C/25°F from the recipe's instruction - Fan ovens circulate hot air, cooking faster and more evenly
Example: Recipe calls for 180°C/350°F → Set fan oven to 160°C/325°F
Why Your Oven Is Wrong
- New ovens need 15-20 uses to "season" — temperature readings stabilize over time
- Oven thermometers are the only way to know your true temperature
- Dark pans absorb more heat — reduce temperature by 15°C/25°F
- Glass pans retain heat — reduce temperature by 15°C/25°F and reduce time by 5 minutes
Hot Spots
Most ovens have hot spots. To test yours: 1. Preheat to 180°C/350°F 2. Place slices of white bread across the entire rack 3. Bake 5-8 minutes — the browned spots show your hot spots 4. Rotate pans during baking to compensate
