How to Measure Flour Correctly

The spoon-and-level method vs scoop-and-pack β€” why it matters more than you think.

How to Measure Flour Correctly

The way you measure flour is the single biggest variable in baking. The same "1 cup" can weigh anywhere from 120g to 180g depending on how you measure.

The Wrong Way: Scooping

Scooping your measuring cup directly into the flour bag packs the flour. This can add 30-50% more flour than the recipe intends, resulting in: - Dry, dense cakes - Tough cookies - Bland bread

The Right Way: Spoon and Level

  • Fluff the flour in its container with a fork
  • Spoon flour into the measuring cup (don't scoop)
  • Level the top with a flat edge (knife or spatula)
  • Don't tap the cup β€” this packs the flour down

This method gives you approximately: - 1 cup AP flour = 125g - 1 cup bread flour = 130g - 1 cup cake flour = 115g

The Best Way: Weigh It

A kitchen scale eliminates all guessing: - Place your bowl on the scale, tare to zero - Add flour until you reach the target weight - Done β€” perfect every time

Why It Matters

Consider chocolate chip cookies. The recipe calls for 2ΒΌ cups (280g) flour: - Spoon-and-level: You get 280g β€” correct - Scooping: You might get 340-360g β€” 20% too much - Result: Dry, crumbly cookies that don't spread

This is why two people following the same recipe get different results.
